Pumpkin Cupcake for Thanksgiving!

So this Monday my work had Thanksgiving lunch. It's a potluck, everyone is bringing a dish and we will all have lunch together to celebrate Thanksgiving! Now I'm not a cook, but I know how to bake ( a little ).So the first thing I did was volunteer to make the dessert. I was going to make my regular red velvet cupcake with cream cheese frosting but a friend suggested that I make pumpkin cupcakes instead because it's more of a "fall dessert" and so she sent me the Martha Stewart pumpkin cupcake recipe.
 
Here is are the ingredients.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon coarse salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1 cup packed light-brown sugar
  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, melted and cooled
  • 4 large eggs, lightly beaten
  • 1 can (15 ounces) pumpkin puree 
 
 
It took a lot of ingredient but turned out pretty yummy. The recipe said it yields 18 cupcakes but i was able to make 24 cupcake with that bach. Also here is the recipe I used for the cream cheese frosting. I didn't like this recipe, I felt like it was TOO cream cheese tasting but everyone said it was yummy.



It looked really lumpy and I had no idea why.. but it turned out okay.
